Stuffed Zucchini – Submitted by Patricia Carson -patricia.carson@century21.com

You must have a large Zucchini cut in half lengthwise don’t peel skin,clean all the seeds out with a spoon. Microwave until soft then fill with stuffing. The stuffing consist of ground chuck fried and drained,cooked rice,one package of lipton onion soup,spaghetti sauce,grated mozzarella cheese and parmesan mix together and fill both sides use a large loft pan cover top with more cheese. Bake 350 for 45 minutes. Great way to use large zucchini.

Quick Crowd Pleasin’ – Anything Goes Dip –

Are you ready for some FOOTBALL? Last minute invite to a viewing party, having people over? Did your husband wait til 4:30 to tell you the guys are comming over for the game at 7:00 – This is an easy, pleasin way to feed the masses.

This recipe is a base for a dip that can go with anything and can be tailored to any group of rabid fans - And the best part –  you most likely already have these ingredients in your fridge and cabinets.

Base – this base can be doubled or tripled – just make sure to add equal parts of each ingredient)

Total time to make this Dip: 15 minutes

Serves 6-8 people

8 OZ of Cream Cheese (Philly brand is the Best!) softened

1 TBSP of Butter softened

1 TBSP of Mayo (Optional)

Use mixer on low/medium until thoroughly blended

ADD & Mix well (Your choice of the following – remember to add equal parts of any ingredient if you double or triple the base)

¾ of a packet of your favorite dry salad dressing mix (Save the rest to add to your taste or to garnish)

OR

4 TBSP to start of your favorite spice blend (Herb & Garlic is a great one) then add more to taste and sprinkle some on top for garnish

OR

¼ Chopped Onion, ½ Chopped red bell pepper, ½ Chopped green bell pepper 1 TSP minced garlic, salt & pepper to taste (a little bacon in this never hurt either)

AND

Add your favorite shredded cheese into the mix – You can even add shredded chicken and some wing sauce (If you do that add some blue cheese crumbles)

This dip is open to your interpretation! You can serve cold (If you serve this cold make sure you refrigerate for at least 30 minutes prior to serving and over night for the best effect) or throw it in the oven at 325 until just browned and bubbly on top and ENJOY!

Killer NO BAKE Cheesecake Squares – Submitted by Katie Christian

This is a crowd pleaser! Easy & quick!

What you’ll need -

One box of regular or honey graham crackers

One container of Philly no-bake cheesecake filling

One pint of Heavy cream

6 TBSP of white granulated Sugar

Optional -

Pastry bag orQuart size Ziplock Bag with one of the bottom corners cut on an angle about 1/4 inch from tip of corner toward center of bag

Disposable pastry/frosting tip – These can be found in the baking isle at any supermarket

Directions

Pour heavy cream into a Large bowl. Using electric mixer on highest setting mix for two minutes – continue mixing and add sugar a little at a time until none is left – continue mixing until cream becomes stiff (Do not over mix cream will fall) Place the whipped cream into fridge (If you are having trouble whipping the cream place the bowl into the fridge for 20 minutes – the colder the cream when you start the easier it will be to whip)

Take cheesecake filling out of fridge

Break graham crackers in half width way. Arrange crackers on platter.

Place pastry tip into bag – if you use the zip lock bag you will need to secure the tip to the bag using tape) Fill pastry bag (or prepared ziplock bag) with filling – push filling toward tip but not through. On a piece of wax paper or on a plate squeeze filling through tip to get it started. After starting the bag squeeze desired amount on to each graham cracker.

Return leftover filling to fridge

Clean pastry bag (or prepare another ziplock bag)

Fill bag with cream and repeat starting technique

Top each cracker with whipped cream and serve

These squares are best if prepared directly before serving – You can prepare them 45 minutes prior to serving but take into account the cracker will absorb moisture from the filling – It is best to put the cream on right before service
